Ingredients
  

  • 3 ripe bananas, mashed (about 1 cup / 240g)
  • 240 g cottage cheese
  • 2 large eggs
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract
  • ½ cups all-purpose flour (or whole wheat flour)
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup chopped walnuts, chocolate chips, or raisins (optional)

Instructions
 

Prepare the Batter:

  • Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a large bowl, mash the bananas until smooth. Add cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Mix until well combined.

Combine Dry Ingredients:

  • In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.

Mix Wet & Dry Ingredients:

  • Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing.
  • Fold in optional add-ins like walnuts, chocolate chips, or raisins if desired.

Bake the Bread:

  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover loosely with foil.

Cool & Serve:

  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Slice and enjoy warm or store for later.

  • Storage:
    • Room temperature: Store in an airtight container for up to 3 days.
    • Refrigerator: Keep for up to 5 days.
    • Freezer: Wrap slices individually and freeze for up to 3 months. Thaw at room temperature or warm in the oven.
