3 ripe bananas, mashed (about 1 cup / 240g) 240 g cottage cheese 2 large eggs ¼ cup honey or maple syrup 1 tsp vanilla extract ½ cups all-purpose flour (or whole wheat flour) 1 tsp baking soda 1 tsp ground cinnamon ½ tsp salt ½ cup chopped walnuts, chocolate chips, or raisins (optional)
Prepare the Batter: Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a large bowl, mash the bananas until smooth. Add cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Mix until well combined.
Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
Mix Wet & Dry Ingredients: Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing.
Fold in optional add-ins like walnuts, chocolate chips, or raisins if desired.
Bake the Bread: Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover loosely with foil.
Cool & Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
