Ingredients
  

  • ½ cup mashed ripe bananas (about 3 medium bananas)
  • 1 cup cottage cheese (blended for smooth texture)
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup whole wheat flour (or all-purpose flour)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup chocolate chips, nuts, or blueberries (optional)

Instructions
 

Preheat and Prepare:

  • Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly with cooking spray.

Mix Wet Ingredients:

  • In a large bowl, combine mashed bananas, blended cottage cheese, eggs, and vanilla extract. Mix until smooth.

Add Dry Ingredients:

  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.

Add Optional Mix-Ins:

  • Fold in chocolate chips, nuts, or blueberries if desired.

Bake:

  • Divide the batter evenly into the muffin tin, filling each cup about ¾ full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve:

  • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
